Strawberry Salad

2 packages strawberry Jello
4 cups hot water
1 large can fruit cocktail (drained)
1 small can crushed pineapple
1 cup pecans
1 carton sour cream
1 cup miniature marshmallows
1 cup white grapes

Dissolve Jello and cool. Add all other ingredients except sour cream. Congeal one half of mixture, then spread on sour cream. Add remaining mixture. Return to refrigerator to congeal.

Fresh Apple Cake

Mix together:

1-1/2 cup cooking oil
3 eggs
2 cups sugar
2 teaspoons salt

Sift together:

3 cups plain flour
1 teaspoon salt
1 teaspoon soda

Add this to the first mixture. Fold in 1-1/2 cups chopped pecans and 3 medium raw apples, chopped fine. (Use good cooking apples, like Winesap or Rome. You’ll need at least 2 cups of apples.) Pour into a greased and floured bundt pan. Bake at 350 degrees for 1 hour.

Topping:

1/2 cup brown sugar
2 Tablespoons milk
1/2 stick butter

Mix and cook for 3 minutes. Pour topping over entire cake while it is hot. Let cake cool before removing from pan.

Spoon Bread

1 package dry yeast
1-1/2 sticks of butter, melted
4 cups self rising flour
2 cups very warm water
1/4 cup sugar
1 egg beaten

Place yeast in warm water. Melt butter. Cream butter with sugar in large bowl. Add beaten egg; add dissolved yeast. Add flour. Stir until well mixed. Place in refrigerator until dough rises. To cook, drop by spoonsful in greased muffin tins at 350 degrees or until browned. Will keep several days covered in refrigerator.

Hot Christmas Wassail Punch

This is absolutely the best recipe for Wassail I’ve ever tried. I tend to judge all others by this and none have even come close.

Recipe for Christmas Wassail

1 gallon of sweet apple cider
1 quart of water
2 cups of sugar
1 six ounce can of frozen orange juice
1/2 cup lemon juice concentrate
4 sticks of cinnamon
1 teaspoon allspice

Combine all ingredients and boil for 10 minutes. Remove cinnamon sticks and serve.

Stuffed Pork Chops

Stuffed Pork Chops

1 large onion, parboiled
3 cups bread crumbs
1 egg
2 teaspoons poultry seasoning
1/2 cup butter
salt and pepper

Cut up onion in small pieces. Add bread crumbs, poultry seasoning and mix. Melt butter and pour over mixture. Beat egg well and add salt and pepper. Mix well together.

Cut slits in the sides of 6 port chops. Stuff in the above mixture and place the pork chops in baking pan. Bake at 300° for 1-1/2 hours. Baste with water.

Heavenly Banana Pie

1 baked pie shell
2 medium sized bananas, mashed
2 egg whites, beaten stiff
1/2 cup sugar
1 teaspoon vanilla

Mix bananas, egg whites, sugar and vanilla. Pour into baked pie shell. Bake 20 to 25 minutes in oven at 325°, or until brown. Cool. Top with whipped cream, cherries and nuts.

About 28 whole cinnamon graham crackers
4 small packages or 1 large package Dream Whip
1 jar (15 oz.) Fudge topping – NOT chocolate syrup!

Beat Dream Whip according to directions; fold in fudge topping. Line a 9″ x 13″ pan with half of the whole graham crackers. Cover with half of chocolate mixture. Add another layer of graham crackers and remaining chocolate mixture. Sprinkle chopped nuts over top. Cover and refrigerate overnight. Cut in squares to serve.

Easy Chicken Supreme Casserole

6 chicken breasts
1 can mushroom soup
1 cup sour cream
1/2 cup slivered almonds

Put chicken breasts in shallow pan. Mix undiluted soups together and pour over chicken. Spread sour cream over top. Sprinkle almonds over sour cream. Bake at 350 degrees for 1 hour and 30 minutes. Serve sauce over rice.

Sausage Quiche

1 lb. sausage
3/4 cup chopped onion
1/2 pint whipping cream
2 eggs
1 cup (or more) shredded cheddar cheese
1 9″ deep dish pie shell partially cooked

Crumble and cook sausage with onion until sausage is done. Drain and put in partially baked pie shell. Combine eggs with whipping cream and pour over sausage mixture. Top with cheese and bake in 350 degree oven for 25-30 minutes or until set. Cool slightly before cutting.

Chilled Corn Salad

1 can whole kernel corn (drained)
1 small onion, chopped
1/2 cup green bell pepper, chopped
2 Tablespoons minced parsley
2 Tablespoons cider vinegar
1 Tablespoon oil
1/4 teaspoon salt
1/4 teaspoon pepper
Lettuce leaves

Combine the first eight ingredients; chill overnight. Drain. Serve on lettuce leaves.
