Heavenly Banana Pie

1 baked pie shell
2 medium sized bananas, mashed
2 egg whites, beaten stiff
1/2 cup sugar
1 teaspoon vanilla

Mix bananas, egg whites, sugar and vanilla. Pour into baked pie shell. Bake 20 to 25 minutes in oven at 325°, or until brown. Cool. Top with whipped cream, cherries and nuts.

Butterscotch Pie

4 tablespoons cornstarch
2 cups brown sugar
5 eggs, separated
2 cups milk
3 tablespoons butter or margarine
1 8 inch pie shell
1 teaspoon baking powder

Mix cornstarch with brown sugar. Beat the egg yolks until thick and lemon colored. Add the brown sugar mixture. Pour in milk and beat well. Place butter or margarine in frying pan and brown lightly. Pour the custard into the pan with the butter and stir until thick. Start over slow flame and gradually increase to moderately hot. This will take about 20 minutes. Cool mixture and pour into baked pastry shell. Beat egg whites until frothy and gradually add in the baking powder. Continue beating until whites are stiff and stand in peaks. Top custard with meringue, spreading to edges of pie and bake at 350° until lightly browned.

Heirloom Recipe for Apple Cobbler

This recipe is from my grandmother, one of the best southern cooks around. She never used a recipe, so this is rather vague. She’d say things like “butter the size of an egg”, which I suspect is the case in this one.

About 4 cups of apples
1-1/2 cup sugar
Butter (the size of an egg?)
Biscuit dough
1-1/2 to 2 cups boiling water

Peel and cut apples. In deep pot put a layer of rolled out dough, half of apples and 3/4 cup sugar. Put strips of dough on top of this and dot with butter. Layer rest of apples, 3/4 cup sugar, some butter and boiling water. Top with more strips of dough dotted with butter. Bake at 350°.

Chess Pie

This was my favorite pie growing up. My grandmother made it. Anytime I asked. And I wonder why I’m so fluffy. When I grew up and had kids, I made it for them. Turns out it became their favorite pie, too. It’s still a family favorite. And so easy!

You’ll need an unbaked pie shell. I use the store bought kind.

1-1/2 cup sugar
1/2 cup (one stick) butter
3 eggs
1 Tablespoon cornmeal
1 teaspoon vinegar
1 teaspoon vanilla

Mix all ingredients. Beat slightly (that’s important). It will have a slightly lumpy texture. Pour into the unbaked pie shell and bake at 350 for 40-45 minutes.
