Chocolate Upside Down Cake

Recipe for:

Chocolate Upside Down Cake

1-1/2 cup flour
2 teaspoons baking powder
1 square chocolate
1/2 cup milk
1/2 cup nut meats
3/4 cup sugar
1/2 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla

Sift dry ingredients. Melt butter and chocolate. Add milk, vanilla and butter and chocolate mixture and nut meats. Pour into greased loaf pan.

Mix:

1-1/2 cup boiling water
3/4 cup brown sugar
3/4 cup sugar
2 tablespoons cocoa

Pour over cake and bake 30 minutes at 350°.

To serve: Slice 1 quart ice cream, brick carton, and top cake, or top with whipped cream.

Waxie Pecan Bars

Waxie Pecan Bars Recipe

1 package brown sugar
2 cups flour
1 teaspoon vanilla
1 cup pecans, chopped
4 egg whites
1 teaspoon baking powder
pinch of salt

Mix together brown sugar, unbeaten egg whites and vanilla. Sift together flour, baking powder and salt. Add to egg mixture and blend. Stir in pecans.

Pour in shallow greased pan and bake at 275°, 15 to 20 minutes. Don’t beat egg whites, this is your liquid in the cookies.

Shary Yacht Club Salad

Shary Yacht Club Salad Recipe

1 cup pineapple, diced
1 cup Royal Anne cherries, pitted
1/4 cup marshmallows, cut into quarters (or use mini marshmallows)
1/2 cup pecan meats, cut

Mix all ingredients; drain well and chill.

Beat well:

4 egg yolks
4 tablespoons sugar
4 tablespoons vinegar (cider or tarragon)

Beat all to cream and cook over hot water until jelly-like. Add:

2 tablespoons gelatin, dissolved in cold water

Beat well and chill. Fold in pint of whipped cream and add fruit mixture. Chill in molds until firm. Serve on lettuce leaves.
